St. Patrick’s Day lunch at The Salvation Army

The Legacy Foundation of Southeast Arizona partnered once again with the The Salvation Army in Sierra Vista to host a special St. Patrick’s Day lunch for residents in need, continuing a tradition that began approximately eight years ago. While the Salvation Army provides lunch Monday through Friday for those facing food insecurity, Tuesday’s meal brought a festive twist, with green attire and a menu of corned beef and cabbage drawing a strong turnout.

 

“I’m in charge of what goes on in the cafeteria at lunch and with the Community Food Bank of Southern Arizona to bring food down here,” said Salvation Army Food Distribution Coordinator Mary Mueller. “We’re expecting to serve anywhere from 130 to 150 lunches for St. Patrick’s Day today.”

 

Preparation for the event began days in advance. Volunteer Toni Lopez noted that kitchen staff started cooking nearly 90 pounds of brisket to ensure there would be enough for everyone. The effort reflects the scale of the need as well as the dedication of those involved.

 

Legacy Foundation board and staff members were on hand to assist with serving and to engage with guests. CEO Margaret Hepburn embraced the spirit of the day, saying, “Despite the fact that I’m Scottish, I always celebrate St. Patrick’s Day. The Scottish love the Irish. The Legacy Foundation enjoy serving and mingling with the guests and have a good time at the Salvation Army.”

 

For many attendees, the meal offered both nourishment and community. Guest Angela Johnson, who visits the facility several times a week, shared, “It’s close by and I just go to the table and get something and make lunch at home. I’m staying for lunch today though, it all looks so good.”

 

Salvation Army Major Brent Church emphasized the importance of the partnership. “What happens here is nothing short of amazing! Because of our community partners and The Legacy Foundation we have lunch to serve five days,” he said. “Then The Legacy Foundation purchases everything for the St. Patrick’s Day lunch. It’s absolutely phenomenal… to make sure our residents have a good meal.”
